Homemade Applesauce

I just made some applesauce, mostly from this recipe. It was absurdly easy.

I had a couple of old apples in the back of the refrigerator (2 medium gala) and some new ones on the counter that were too soft for my taste (3 small braeburn). So I peeled, cored, and chopped them, and threw them in a pot, covered, with 3/4 c. water, 1/4 c. white sugar, and a lot of cinnamon that I didn’t measure.

Brought to a gentle boil, then immediately lowered to a simmer for 20 minutes. Stirred a couple of times. The recipe says to mash with a potato masher, but I put the soft apples and cinnamon water in my blender and blended it for 15-20 seconds. (I like smooth, not chunky applesauce.) Voila.

And now my three or so cups of applesauce is cooling on my counter before it goes into the fridge. I tasted it while it was still hot, and it was delicious. Plus my house smells good. Never buying applesauce again.
